PACHERENC DU VIC-BIHL DOUX
"SYMPHONIE D’AUTOMNE" 2006

This sweet wine has aromas of aromatic pears, coated in
clover honey.Golden amber in colour, Symphonie
d’automne brings a flavour of crystallized and dried
fruits.The vintage is entirely harvested by hand, from
early November to December and is a blend of Petit
Manseng (90%) and Petit Corbu (10%). Symphonie
d’automne is perfect with apple tart, blue cheese or foie
gras.

BANYULS RIMAGE
"LES CLOS DE PAULILLES" 2006

Produced in Collioure, on the Mediterranean coast, this
vin doux is made predominantly from Grenache
Noir grapes, which are selected and destemmed by
hand. Fermentation is stopped through the addition of
grape brandy, after which the wine macerates for 3
weeks on the skins before being aged in tanks.This wine
is spicy and rich. It has hints of mocha, green herbs,
cherries, raisins and notes of summer pudding.
Well balanced between sweetness and tartness,
Banyuls Rimage has a long finish. It pairs well with
cheese, chocolate, tarte aux raisin along with classic
savoury dishes.

CHATEAU DE JAUGRAND ROUSSILLON
VIN DOUX NATUREL 2002

A beautiful sticky made from late harvested Grenache
Blanc, which is fermented in open-topped barrels. The
wine has a tangerine marmalade flavour and the colour
to match! No dessert required!

DOMAINE BERTHOUMIEUVIN DE LIQUEUR
"TANATIS"

This red vin de liqueur is the result of sugar-full raisins,
late harvested in November. Tanatis is produced from
100% tannat from vines that are over 50 years old. The
wine is macerated for 10 days to obtain its distinct
flavour. The fermentation is stopped and the wine is
then aged for 8 months in oak and bottled young.
Tanatis has aromas of bitter-sweet cherries, wild berries
and prunes. The smooth texture of this vin de liqueur is
balanced by a hint of tannin. Enjoy with cheese,
chocolate tart or on its own!

CLOS DU GRAVILLAS (organic)
MUSCAT DE SAINT JEAN DE MINERVOIS
"DOUCE PROVIDENCE"

Brought to us by Nicole Bajanowski and Kentucky
husband John this muscat has all you would expect
from a classic Muscat de Saint Jean de Minervois.
The wine is fortified to stop fermentation at the
minimum allowed 135g/l residual sugar.
With hints of pineapple, a floral nose along with the
mineral freshness that you would expect.This pairs
perfectly with Roquefort cheese, goats cheese drizzled
with honey or can be enjoyed as an aperitif.We like to
serve it poured over just-picked strawberries.

BRUMAIRE 2005

Brought to us by Alain Brumont, the man that redifined
Madrian in the 1980s, Brumaire is a November harvested
soft toned wine created with 100% petit Manseng.
It has an aromatic bouquet with a nose of toast, cinnamon
and caramelised pears.
