Description

Low yielding vines of between 70 and 85 years of age, at an altitude of
more than 600 metres, in small plots around Laguardia.

Alcoholic fermentation carried out entirely in 500 litre French oak barrels at a low temperature in chambers chilled to 16ºC over 14 days. Maceration: One day's skin contact in order to extract all the aromatic potential.

Fermentation in oak barrels, half of them new and the other half 2 and 3 years old (medium toast.) Left on fermentation lees with occasional stirring and minimal sulphur additions for 7 months.
